Mix the egg yolks, sugar and a pinch of salt in a large bowl, using a sauce whisk. Add the mashed Broccio cheese, the brandy and grated lemon rind. Work further to mix well. Beat the whites stiff and fold them delicately into the Broccio mixture. Line an
8 x╩8-inch square mold with oiled wax paper. Pour in the mixture and bake into a hot oven (400F) for 35 minutes. Turn out and serve cold.
